Ingredients
  

Salmon and Stuffing

  • 4 pieces salmon fillets Fresh, skinless salmon fillets.
  • 1 cup fresh spinach Use fresh spinach for the best texture.
  • 1/2 cup feta cheese, crumbled Substitute with cream cheese or ricotta if needed.
  • 1/2 cup roasted red peppers, chopped Add flavor and color to the stuffing.
  • 2 tablespoons olive oil Drizzle over salmon before baking.
  • Salt and pepper to taste
  • Lemon wedges for serving Adds brightness when serving.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix together spinach, feta, and roasted red peppers.
  • Cut a slit into the side of each salmon fillet to create a pocket.
  • Stuff each fillet with the spinach mixture.
  • Drizzle olive oil over the stuffed salmon and season with salt and pepper.

Cooking

  • Place the salmon on a baking sheet and bake for 20-25 minutes or until cooked through.

Notes

Serve warm, paired with quinoa, brown rice, or a fresh green salad. Squeeze lemon juice over the salmon just before serving for extra brightness. Store leftovers in an airtight container in the refrigerator for up to 2 days.
